We also tried a 350 Chevy equipped with a long-duration cam and a Holley 750-cfm 0-3310 vacuum-secondary carb that suffered from a bad off-idle stumble and a pig-rich 10.5:1 ratio at part-throttle cruise. The WOT air/fuel ratio was only slightly rich at 12.2:1. I do use a lot more of it than gasoline (approx 25% more at cruise and 35-40% more at WOT) but it seems to be a good alternative for me at this point (it runs 50 cents cheaper per gallon than pump premium gasoline octane and is $2 cheaper than race gasoline).

Any leaner at wot and will burn the motor down I've seen it lots. As for cutting out I would check fuel flow, do you have a larger fuel pump? Maybe the bowls are going dry at wot. The 69 main jet brought the cruise AFR at 2,200 rpm into the mid 14's. 2,800 rpm is mid 15's. With the 10.5 power valve, the leanest AFR is about 16 before the power valve opens. The larger PVCR's brought WOT AFR down to 12.5. The top of the transfer slot is a little leaner now; 16 instead of 15.5. You need to get your engine fueled properly or you will be beating a dead horse. Ideally your air/fuel ratio should be 12.5-13.0 at WOT for max power on a naturally aspirated v8. With your current carburetor, I estimate 10.5-11 AFR, you must be drinking fuel and not going very fast with that setup. You can't achieve WOT rpm at the wrong fuel ... For AFR's under moderate boost like that, you should be shooting for a 12.5 - 13.0 AFR. If you are seeing under 12 AFR at only moderate throttle it's too rich and you'll lose power like you are experiencing. It's called combustion quench.
